Rola koloidów asocjacyjnych w procesie autooksydacji olejów roślinnych, naturalne przeciwutleniacze i ich potencjał antyoksydacyjny, zastosowanie liposomów i kropek kwantowych w analizie żywności, zastosowanie metod spektroskopowych (spektrofotometria UV-Vis, fluorymetria, dynamiczne rozpraszanie światła DLS) w analityce żywności, oddziaływania polifenoli z białkami.
